Ingredients
- 1 pizza dough ball (about 250–280g)
- 120g raw prawns, peeled
- 1 clove garlic
- 1 tsp fresh ginger, grated
- 1 tbsp soy sauce
- 1 tsp Mirin
- 1 tsp sesame oil
- 1 spring onion, finely sliced
- 1 tsp cornflour
- Handful of Coriander
- Sesame seeds (white), for topping
- Optional: a drizzle of chilli oil
Method
- Heat the oven
Preheat your pizza oven for 20–25 minutes until the stone is very hot.
- Make the prawn mix
Finely chop or blitz the prawns into a rough paste. Mix with garlic, ginger, mirin, soy sauce, sesame oil, spring onion, coriander and cornflour.
- Prepare the base
Stretch the dough into 2 5-6 inch rounds.
- Top the pizza
Spread the prawn mixture evenly over the base like a paste layer. Sprinkle generously with sesame seeds.
- Bake
Launch into the oven and cook for 60–90 seconds, turning regularly, until the crust is puffed and the prawn topping is cooked through and slightly crisp on top.
- Finish
Remove from the oven and finish with a drizzle of chilli oil if using.
Chef’s Tip
Keep the prawn layer thin and even so it cooks quickly and mimics that classic prawn toast texture — crisp on top, juicy underneath.
