Chips, cheese & gravy… but make it pizza
A proper late-night classic turned into a full-blown mash-up — rich gravy base, seasoned fries, and melted cheese on top.

Ingredients
- 3–4 tbsp thick gravy (beef-style works best)
- 1 pizza dough ball (about 250–280g)
- 1 handful seasoned fries (pre-cooked or par-fried)
- 80–100g mozzarella (or a mozzarella/cheddar mix)
- 20g cheddar, grated (optional, for extra richness)
- Salt and pepper, to taste
- Optional: a pinch of chip seasoning or paprika
Method
- Heat the oven
Preheat your pizza oven for 20–25 minutes until the stone is very hot.
- Prepare the base
Stretch the dough into a 10–12 inch round.
- Top the pizza
Spread a layer of thick gravy over the base (like a sauce). Add the seasoned fries evenly across the pizza. Top generously with mozzarella and a little cheddar if using.
- Bake
Launch into the oven and cook for 60–90 seconds, turning regularly, until the crust is puffed and the cheese is melted and bubbling.
- Finish
Remove from the oven, season lightly, and serve immediately while molten.
Chef’s Tip
Keep the gravy thick so it acts like a base — too thin and it will soak into the dough too quickly.
