Ingredients
- 500g beef mince 1 onion, finely diced 2 carrots, diced 2 garlic cloves, minced 1 tbsp tomato purée 1 tbsp Worcestershire sauce 300ml beef stock 1 tsp dried thyme 1 tsp plain flour 500g potatoes, peeled and chopped 50g butter 50ml milk 100g mature Cheddar, grated 1 tbsp olive oil Salt and freshly ground black pepper
Method
- Prepare the mash. Boil the potatoes in salted water until tender. Drain, then mash with the butter and milk. Season to taste and set aside.
- Brown the mince. Place the cast-iron pan over the heat and add the olive oil. Fry the beef mince until browned, breaking it up as it cooks.
- Add the vegetables. Stir in the onion and carrots and cook until softened. Add the garlic, tomato purée, thyme and flour, stirring well.
- Build the sauce. Pour in the beef stock and Worcestershire sauce. Simmer until the liquid has reduced and the mince mixture is rich and thick, with no excess liquid pooling in the pan.
- Top with mash. Spread the mashed potato evenly over the beef mixture, roughing up the surface with a fork to create crispy edges. Scatter over the grated Cheddar.
- Finish in the Delivita. Transfer the pan into a moderately heated oven and cook until the cheese is bubbling and the potato topping is golden. Rotate the pan as needed for an even finish.
- Serve. Allow to rest briefly before serving straight from the pan.
Delivita tip: A well-reduced filling is essential. Too much liquid will make the mashed potato topping sink into the beef rather than sit neatly on top.
