Ingredients
- 1 x 250g pizza dough ball
- Flour or semolina, for stretching
- 1 large boneless, skinless chicken thigh
- ½ tbsp olive oil
- ½ tsp garlic granules
- ½ tsp dried oregano
- ¼ tsp smoked paprika
- Salt and freshly ground black pepper
- ½ Little Gem lettuce, roughly chopped
- 2 tbsp Caesar dressing
- 20g Parmesan, finely grated or shaved
- 2 tbsp crispy onions
- Extra Parmesan, to finish
- Freshly cracked black pepper
Chicken Caesar, but make it a pizza sandwich.
We’ve taken everything we love about a classic Caesar and stuffed it into freshly baked, blistered pizza bread.
Charred chicken thighs, crisp Little Gem, creamy Caesar dressing, plenty of Parmesan and crispy onions, all packed into a warm, chewy panuozzo.
The perfect excuse to get the Diavolo fired up.
Method

Season the chicken
Toss the chicken thigh with olive oil, garlic granules, oregano, smoked paprika, salt and pepper. -
Cook the chicken
Place in a cast-iron pan and cook in the hot Delivita until golden and charred around the edges and cooked through (internal temp of 74c). Rest for a couple of minutes, then slice. -
Bake the panuozzo
Stretch the dough into an elongated shape and bake in the Delivita until puffed, blistered and lightly charred. Remove and allow to cool for a minute before slicing horizontally, leaving one edge attached. -
Make the Caesar filling
Toss the Little Gem with the Caesar dressing and Parmesan. -
Build
Layer the dressed lettuce into the warm pizza bread, followed by the sliced chicken and crispy onions. -
Finish
Add more Parmesan, crispy onions and plenty of freshly cracked black pepper. Serve immediately.
