Autumn Harvest Pizza - apple, pork belly, sage & onion stuffing
Here’s our Autumn Harvest Pizza recipe, inspired by roast dinners, orchard apples, and the warmth of your wood-fired Delivita oven. This pizza balances sweet, savoury, herby, and cheesy elements – perfect for cozy evenings.

Ingredients
- ½ a medium apple
- 60–80g pork belly, thinly sliced
- 3 tbsp sage and onion stuffing (pre-mixed and cooled)
- Fresh thyme leaves (a small pinch)
- Extra virgin olive oil
- Freshly ground black pepper
- 1 Delivita award-winning sourdough pizza dough ball
- 50g grated Pecorino Romano
- 50g fresh mozzarella strips
- 50g grated mozzarella
Preparation
Preheat your Delivita wood-fired oven:
Get the oven up to around 400–450°C (750–850°F) for a crisp, fast-cook crust. Let the flame roll gently across the roof for even cooking.
Assemble the Pizza
1. Prep the Dough:
On a floured surface, stretch the sourdough dough ball into a 10–12" base.
Avoid overworking it – keep that beautiful sourdough airiness!
2. Cheese Base Layer:
Sprinkle grated Pecorino directly on the pizza dough.
Add mozzarella strips across the base. Fill in with grated mozzarella to bind it all together.
This cheesy base will mimic the richness of a roast dinner sauce.
3. Stuffing Dabs:
Break the sage & onion stuffing into small pieces and scatter it evenly across the cheese base. These will crisp up around the edges, like roast stuffing balls.
4. Add Apple & Pork:
Arrange thin slices of apple across the pizza – try to keep them away from the centre for even roasting.
Drape the thin pork belly slices between the apples, allowing some overlap. If using raw pork belly, sear it first for a minute or two to reduce fat and help it crisp.
5. Finishing Touches:
Sprinkle with fresh thyme leaves.
Drizzle lightly with olive oil.
Add a touch of cracked black pepper.
Cooking in the Delivita Oven
1. Launch the Pizza:
Use a floured pizza peel to transfer your pizza to the oven floor.
Rotate every 20–30 seconds for even browning and bubbling.
2. Cook Time:
60–90 seconds total in a hot Delivita pizza oven. Turn every 10 seconds.
Watch for bubbling cheese, crisped edges of the pork, and golden apple slices with slight charring.
Serving
Remove from the oven and rest for 30 seconds.
Optional: drizzle with a touch of honey, cider glaze, or finish with a few fresh thyme leaves and sea salt flakes.
Slice and serve while warm.
