Apple Tarte Tatin in the DeliVita Pizza Oven

Ingredients
- 4–5 medium apples (Braeburn, Pink Lady, or Honeycrisp work best)
- 75 g unsalted butter
- 100 g caster sugar
- 1 ball DeliVita pizza dough (for the pastry top)
- Pinch of sea salt
- Optional: splash of Calvados or vanilla, and a brush of apricot glaze for shine
Method
- Bring it up to around 200–220°C (medium heat) — you want a steady, even heat, not fierce flame.
- In a small cast-iron or ovenproof skillet, melt butter and sugar over gentle heat until golden and bubbling.
- Add apples (peeled, halved, and cored) cut-side up, and cook a few minutes until they start to soften.
- Roll out your DeliVita dough slightly thicker than pizza thickness.
- Drape it over the apples, tucking the edges gently down into the pan.
- Slide the skillet into the oven and cook for 10–15 minutes, rotating as needed, until the crust is golden and crisp.
- Let rest 2–3 minutes, then invert carefully onto a plate so the apples are on top and the caramel drips down over them.
- Brush with apricot glaze if you want that glossy patisserie finish.
Chef’s Tip
For a light smoky undertone, keep a small ember glowing near the mouth of the oven — the apples will pick up a subtle char and depth.
