Ingredients
- 4–6 chicken thighs (bone-in, skin-on)
- 3 cloves garlic, crushed
- 1 lemon (zest and juice)
- A few strips lemon peel
- 4–5 sprigs fresh thyme
- 2 tbsp olive oil
- Salt and black pepper, to taste
Method
- Heat the oven
Preheat your pizza oven until hot but slightly cooler than pizza temp (allow the flame to die down slightly).
- Prepare the tray
Place the chicken thighs in a roasting tray. Add garlic, thyme, lemon zest, lemon peel, and juice. Drizzle with olive oil and season well. Toss to coat.
- Cook
Place the tray in the oven and cook for 15–20 minutes, turning once, until the skin is golden, slightly charred, and the chicken is cooked through.
- Finish
Spoon the tray juices over the chicken before serving. Add an extra squeeze of lemon if desired.
Chef’s Tip
Position the tray slightly away from the fiercest heat to avoid burning the garlic while still getting beautifully crisp skin.
