Folded Mortadella Pizza Sandwich

Ingredients
- 1 pizza dough ball (about 250–280g)
- 2–3 tbsp tomato sauce
- 80–100g mozzarella, torn
- 4–5 slices mortadella
- A handful of fresh rocket
- Olive oil, for drizzling
- Black pepper, to taste
Method

Heat the oven
Preheat your pizza oven until the stone is very hot (about 20–25 minutes). -
Bake the base
Stretch the dough into a round and bake it plain for 60–90 seconds, turning regularly, until puffed and lightly charred. -
Fold the sandwich
Remove from the oven and slice open or fold in half to create a sandwich pocket. Layer in the mortadella and fresh rocket. -
Melt the topping
On a pizza peel, spread the tomato sauce and mozzarella together. Place the peel into the oven briefly until the cheese is fully melted, bubbling, and slightly blistered. -
Finish
Carefully slide the molten mozzarella and tomato mixture over the sandwich filling. Drizzle with olive oil and finish with black pepper.
