Ingredients
- 2tbsp veg oil
- 100g green curry paste
- 1x 400ml tin coconut milk
- 150ml veg stock
- 1 red pepper
- 1 green pepper
- 1 ‘re chilli
- 200g mushrooms sliced
- 60g baby sweet corn halved
- 50g mange tout
- 160g baby plum tomatoes
- 1tbsp palm sugar
- 4 Tbsp soy sauce
Instructions
Cut the peppers into 2cm squares
De-seed the chilis and slice as finely as you can
Put the oli in the pan and heat until hot
Add the green curry paste frying for 2 mins
Pour in the coconut milk and stock and stir to combine.
Bring to the boil and add all other ingredients
Simmer for 10 mins
Turn the pan and simmer for another 10 mins
Once the curry has simmered for a total of 20mins, serve with rice or noodles and enjoy!
