“Simple but tasty, this roasted asparagus dish makes the perfect Summer side.”
Ingredients
- 300 – 400g of asparagus
- 2 tbl spoons of olive oil
- Salt and freshly ground black pepper
- Juice of 1 lemon
Instructions
Remove any hard woody ends from the asparagus.
Coat asparagus in the olive oil and sprinkle on the salt and pepper.
Cook in a suitable roasting tray / pan or grilling basket for 5 – 8 mins turning regularly.
Sprinkle with the lemon juice and season to taste.
