Ingredients

  • 2 large cooking apples – sliced thinly
  • 6 tbsp of plain flour
  • 6 tbsp of fine sugar
  • 1-2 tbsp brown sugar
  • 2 large eggs
  • 2 tbsp of butter
  • 1 tsp of baking powder
  • Rind of one lemon
  • Amaretto biscuits
  • Ground almonds

Instructions

Combine flour, sugar and baking powder then add the butter, eggs and lemon rind, mix until a smooth paste is formed.

Add the sliced apples to the mixture and combine using a spatula, spoon.

Form a layer of crushed amaretto biscuits on the bottom of a lightly greased dish and top
with the apple mixture.

Sprinkle the topping with the brown sugar (normal white sugar is ok also) and ground
almonds along with a few small dabs of additional butter. We also added a handful of raisins.

Place into the oven at 180 degrees C for around 45 minutes.
