Our DeliVita Cook off winner Simon treats us to his very own tasty Sour Dough recipe
Ingredients
- Ingredients (one loaf)
- 14oz flour (we used half/half wholemeal and strong white Italian)
- 5g salt
- 6oz lievito madre (mother yeast) or approx 1.5-2tsp of dried yeast to substitute.
- 230ml luke warm water (increase slightly if using dried yeast)
Instructions
Combine all ingredients together until a soft dough is formed, we use a Kitchenmaid with
dough hook for about 5 minutes. (Note if using dried yeast make this up in the warmed water first, allow it to start bubbling and then add to flour, you will need a little more water to make up for that lost through not using the mother yeast which is already quite wet)
Place into a lightly oiled bowl and cover with clingfilm and allow to rise/double in size. Take out, knock back/fold a few times. Shape and place onto the dish you are going to bake on (lightly dusted with flour) and allow to rise again for a few hours (2-3 times rise). Make a cut into the top of the loaf with a sharp knife and then place into the oven at around 200 degrees C for about 30 minutes, rotate as necessary to brown/cook evenly.
