This fresh and tasty Mussel dish will be at hit at any dinner party
Ingredients
500g fresh mussels
White wine – for cooking
Breadcrumbs
Olive oil
Flat leaf parsley
Garlic cloves or garlic puree
Parmesan cheese
Instructions
Scrub the mussels and remove any beards
Heat a dish in the oven and add the cleaned mussels along with the white wine
Put a lid on the dish or tightly seal with foil
Slide into the oven for 4-5 mins, shaking occasionally until all the mussels have
opened
Allow to cool enough to handle, discarding any mussels that have not opened
Loosely blitz together then breadcrumbs, garlic, parsley parmesan with the olive oil
Remove and discard the upper shell form each mussel
Sprinkle the moist breadcrumb mix onto each mussel, filling the empty space around
the meat and a little over the top. Don’t press down, we want this loose and crumbly
so just let the mixture drop on top.
Lay the mussels into a baking tray and slide back into the oven for 5-6 minutes until
golden brown and steaming hot
