Ingredients

  • 1 finely chopped red onion
  • 2 tbsp. white wine vinegar/if you don’t have white vinegar use olive oil.
  • Rock salt and freshly ground black pepper
  • 5 tbsp. olive oil
  • 1 bag. 500g baby potatoes, halved
  • 500g small radishes, quartered
  • 8  (about 3/4-inch-thick) bone-in-lamb loin chops

For the garnish

  • fresh mint, chopped you can use times or oregano
  • feta, crumbled (about 1/4 cup)

Instructions

Light your DeliVita oven- 30 min 400c . Combine onion and vinegar/olive oil in a bowl. Season with salt and pepper. Let stand 20/30 minutes.

Coat the bottom of your cast-iron tray/pan with 2tbsp of olive oil. Add potatoes and season with salt and pepper; arrange cut sides down. Roast 10 minutes ( make sure your flame is not to high!). Add radishes and roast until potatoes are golden brown and radishes are tender, around 15 minutes.

Season lamb with salt and pepper.Cook to desired degree of doneness, 3 to 5 minutes per side for medium- rare; transfer to a platter.

Add mint, feta, and remaining 2 tablespoons oil to onion mixture. Serve lamb topped with relish and vegetables alongside.
